Balsamic Date Vinaigrette

YIELD: 1 ½ CUPS
INGREDIENTS:
½ cup + 2 T. extra virgin olive oil
½ cup balsamic vinegar
3 T. date paste (or 6-8 large dates, pitted)
½ t. salt
¼ t. cracked black pepper, more to taste
2 cloves garlic
¼ cup water

PREPARATION:
1. Blend all ingredients in a blender until smooth, about 1-2 minutes.
2. Season to taste, and serve on salad or cooked greens.
