This recipe is more of a format for play rather than a set recipe. Enjoy various combinations in this new twist on breakfast cereal.
Serves 2
Ingredients
3 cups short grain brown rice, cooked
2 cups coconut milk (or one can)
2 T. raw honey or agave nectar (optional)
pinch of sea salt
1 T. vanilla (optional)
1/2 – 1 t. cinnamon (optional)
1/4 – 1/2 cup blueberries, soaked goji berries, or blackberries
1 – 2 T. choice of: pumpkin seeds, sunflower seeds, almond butter
Preparation:
1. Add brown rice and coconut milk to a pot and stir over medium low heat until creamy and simmering. Add water if you need more liquid. Stir in honey, sea salt, and seasoning of choice.
2. Optional: Add in berries – cook 10 – 15 minutes more
