Mix Abby’s Bright Green Sauce with brown rice, mix with sautéed vegetables, or drizzle over white fish for a distinctive, tangy flavor.
Yield: 1 cup
Ingredients:
1/4 cup extra-virgin olive oil
3 T. Umeboshi plum paste
1 bunch scallions, diced
1 bunch parsley, minced
1 T. Vinegar or chickpea miso, to taste
Water as needed
Preparation:
1. Warm oil gently over low heat, 3 minutes.
2. Mince parsley and set aside.
3. Transfer oil to a food processor or blender, and add plum paste, green onions, parsley and a dash or vinegar or chickpea miso. Process until smooth, adding water to thin as needed.
