Gluten Free Granola
Yield: 10 cups
Ingredients:
1/2 cup coconut oil
1 cup honey or maple
10 cups gluten free rolled oats
3 cup dried coconut flakes
3 cup slivered almonds (or nut of choice)
½ teaspoon sea salt
1 teaspoon cinnamon
1/4 teaspoon ground ginger
½ cup dried apples (or fruit of choice: apricots and papaya are also nice)
½ cup dried cherries
1. Preheat the oven to 275°F.
2. Melt ½ cup coconut oil over low heat.
3. In a medium sized bowl, combine coconut oil with 1 cup honey and stir together.
4. In a small bowl combine 10 cups oats, cup coconut flakes, 3 cup almonds, and ½ teaspoon salt, 1 teaspoon cinnamon and 1/4 teaspoon ground ginger.
5. Combine oat and honey mixture and lay out on an oiled baking sheet.
6. Bake for 30 minutes, turning often.
7. Allow to cool and stir in dried fruit.
