Maple Citrus Vinaigrette

Yield: 30 servings

Ingredients:
1-1/4 cup apple cider vinegar
1 cup maple syrup
1 Tablespoon orange (or lemon zest)
1 teaspoon dijon mustard
1 teaspoon thyme, finely chopped
3 teaspoon sea salt, to taste
2 cups extra virgin olive oil

Method:
1.  Combine all ingredients together, slowly whisking in the olive oil.  Chill.
2.  Whisk together when ready to use.

This dressing is delicious tossed with spinach greens, gluten free croutons, and a sprinkle of nutritional yeast!  Yum!
