Soy-Free Ponzu

Yields: 1/2c

Mirin 1c

Sake 1c

Lemon Juice 2/3c

Rice Vinegar 1/4c

Sesame Oil 1/2t

Olive Oil 2T

Salt 1t, more to taste

Method:

Bring all ingredients to a boil in a saucepan over medium heat. Reduce heat, and simmer until liquid is reduced, about 25 minutes. Cover and chill, if desired.

Suggested Uses: Ponzu goes well with a variety of Asian dishes, including sushi, spring rolls, tempura vegetables. It can also be used as a dressing when whisked together with a small amount of oil.
