A wonderful addition to a spread of hors d’oeuvres – also works as a lovely condiment for sandwiches.
Makes 2 1/2 cups.
1 cup sun dried tomatoes, soaked for 2-3 hours
1/2 cup fresh tomatoes
1/2 cup walnuts, soaked
1/4 cup basil
2 cloves garlic
1/2 t. curry powder
Salt to taste
Blend everything in the food processor until almost smooth. If you do not have one you can try the blender or a hand blender.
Optional: place paté in the center of a 1-foot piece of plastic wrap, and form into a log shape, wrapping with the wrap and twisting at the edges to form a roll. Chill for 4 hours at least, or overnight. Unwrap and slice.
