Wheat-free Amaretti Cookies

A holiday favorite – delight your friends and family with cookies everyone can enjoy.

Ingredients

2 cups almond flour (or almond meal)
1 + 1/2 c. maple or coconut sugar
1 T. cocoa powder
3 organic egg whites
1 1/2 t. almond extract
pinch of sea salt
1/2 cup pine nuts (for topping)

1. Preheat oven to 350, positioning racks to center and lower oven. Line baking sheets with silpat or parchment paper.
2. Whisk together almond flour, sugar and cocoa.
3. Beat eggs and extract in a small bowl; add to almond meal mix.
4. Scoop dough 1 T. (or use a 1 ounce ice cream scoop) at a time, and place on lined baking sheet. Cookies should be 1 1/2 – 2 inches apart. Use a fork to flatten each cookie and top with pine nuts.
5. Bake 10 minutes on bottom rack, then 5 minutes more on middle rack.
