Abby’s Favorite Summer Smoothies

Here is a short list of some standby summer smoothies that I make again and again. I love sharing smoothie recipes with friends just by word of mouth, so I encourage you to “play telephone” and pass along these recipes and your own favorites as a way to spread the love of smoothies! Here’s to many happy meals in a glass, straw optional.

Detox Green Smoothie

Yield: 2 large servings

Ingredients:

1 avocado

2 large yellow plums

½ a lemon (skin and all!)

2 cups coconut water

1 large handful arugula or lettuce

½ cup ice

Optional Add ins: ¼ cup Ginger, ½ cup Parsley, ¼ cup Mint, ½ cup Berries!

Preparation:

Put all ingredients in a high speed blender.

Add enough coconut water so that all ingredients are covered.

Blend well and enjoy.

Berry Tropical Smoothie

Yield: 2 large servings

Ingredients:

2 cups raspberries or blueberries (fresh or frozen)

2 cups pineapple, roughly chopped (fresh or frozen)

1 large banana, peeled

1 mango, peeled and roughly chopped

1 cup aloe vera juice (or coconut water)

2 cups almond milk (or coconut milk)

2 Tbsp. flax seed or almond butter

2 Tbsp. coconut oil

Preparation:

1. Put all ingredients in the blender except the berries.

2. Blend well, then pour out half the smoothie into your glasses to serve.

3. Add the berries and blend with the remaining half smoothie in the blender.

4. Top the glasses off with the berry smoothie, so you have two layers! Enjoy.
