Almond Flatbread Crackers

  • 1 cup blanched almond flour
  • ¼ cup arrowroot or tapioca flour
  • 1 tsp. baking powder
  • ¼ tsp. sea salt
  • ½ tsp. black pepper
  • 1 ½ tsp. oregano
  • 1 tsp. nutritional yeast
  • 2 Tbsp. coconut oil
  • 1 egg
  1. Preheat the oven to 350.
  2. Combine the dry ingredients in a bowl and make room in the center to add in the wet ingredients. Crack in the egg and add in the melted coconut oil (should be warm, not hot). Mix ingredients with a spatula until dough is formed.
  3. Divide the mixture into 4 small balls. Roll out each ball into a 3-4 inch circle, and transfer to a parchment lined baking sheet.
  4. Bake for 18-20 minutes. Cool and slice each circle into 4 to yield 16 flatbread crackers.
