Balsamic Date Vinaigrette

Yields: 1½ Cups
Ingredients
  • ½ cup + 2 T. extra virgin olive oil
  • ½ cup balsamic vinegar
  • 3 T. date paste (or 6-8 large dates, pitted)
  • ½ t. salt
  • ¼ t. cracked black pepper, more to taste
  • 2 cloves garlic
  • ¼ cup water
Instructions
  1. Blend all ingredients in a blender until smooth, about 1-2 minutes.
  2. Season to taste, and serve on salad or cooked greens.
