Cashew Sour Cream

Here is one of my most popular sauces, recently paired with crispy beet fritters for my May pop up dinner at Revolver in Hamtramck, Michigan (Detroit area)! Thanks to all the diners who requested this recipe:)

Cashew Sour Cream

Yields: 2-3 cups
Ingredients
  • Yield: 2-3 cups
  • 2 cups cashews, soaked 4 hours or more
  • 2 Tablespoons lemon juice
  • 2 Tablespoon apple cider vinegar
  • ½ teaspoon of sea salt, more to taste
  • ½ cup water
  • ¾ cup finely chopped chives or scallions
Instructions
  1. Combine all ingredients apart from the chives in a blender until smooth. Fold in the chives and chill until ready to serve.
