Cocoa Powerballs

 

Cocoa Powerballs

Yields: 40-50 power balls
Ingredients
  • 2 cups almond butter (1 pound)
  • 1 ½ cups raw honey or pitted dates, deseeded and finely chopped in a food processor
  • 3 cups rolled oats
  • 2 cups shredded coconut or white sesame seeds
  • 2 Tbsp. cocoa powder
Instructions
  1. Mix the almond butter and honey (or chopped dates) together in a bowl.
  2. Measure oats as they are, or blend them, until they assume a powder like texture.
  3. Add the oats, cocoa powder, and shredded coconut or sesame seeds to the butter/honey mixture and mix until combined, working with hands. Adjust consistency if necessary.
  4. Roll batter into small balls. Wet hands often to prevent mixture from sticking to hands.
  5. Roll balls in coconut, white sesame seeds or any other of my suggested coatings and enjoy or store in the fridge until you feel like a snack.
Notes
These keep for 10 days in the refrigerator and they freeze well – keep frozen and pop out 20 minutes before eating!

Optional coatings and add ins:

1 cup shredded carrot
1 cup raisins
1 tsp. cinnamon
¼ cup ground flaxseed
¼ cup goji berries or cocoa nibs
