Garbanzo Bean and Herb Croquettes

 

Garbanzo Bean and Herb Croquettes

Ingredients
  • 1-1/2 cup chickpeas, cooked
  • 1 cup cooked rice or quinoa
  • ½ cup shallot, diced
  • 2 garlic cloves, minced
  • ½ cup celery, diced
  • ½ teaspoon dried oregano
  • ½ teaspoon sea salt
  • 1 Tbsp. dijon mustard
  • 1½ cups almond meal or gluten free breadcrumbs
  • 1 cup all purpose gluten free flour
  • 1 egg
  • 1 Tbsp. olive oil, for batter
  • coconut or grapeseed oil, for pan frying
Instructions
  1. Set ¼ cup flour aside in a bowl.  Work remaining ingredients together in a food processor, or mash in a bowl with a tool, adding olive oil moisture is needed.  Taste for flavor and let sit 10 minutes.  Form into balls no bigger than 2 inches in diameter.
  2. Heat a pan with ¼-1/2 cup coconut oil over medium high heat until very hot.  Press the spatula to flatten the croquettes Fry croquettes 2-3 minutes per side, and if needed place on a baking sheet to keep warm, 250 degrees for 5-10 minutes.
