Salmon Salad Wrap with Bright Green Sauce

This is a fabulous summer lunch – be forewarned, it’s messy to eat, but it always hits the spot! During summer when you need to cool the body down but want something a little more than just a plain lettuce salad, this recipe swoops in to save the day. Make the sauce and use for the week on veggies, fish, or on this wrap.

Ingredients:

1 ¼ pound cooked salmon, chopped
3 stalks celery, finely chopped
1 apple, finely chopped
1/3 cup red onion, chopped

¼ cup red wine vinegar
2 tbsp. extra virgin olive oil
1 tsp. raw honey
¼ tsp. sea salt
pepper, to taste

2 heads red lead lettuce
2 carrots, shredded

1/2 cup bright green sauce (see recipe)

Preparation

1. In a small bowl whisk together oil, vinegar, honey, salt and pepper.
2. Combine salmon salad ingredients with vinaigrette, and stir to combine well.
3. Place whole leaves of lettuce on a cutting board, and slice leaves lengthwise down the center to make for wraps that are easier to eat.
4. Divide the shredded carrot equally among the leaves in the lower third of the leaf. Next add the salmon salad equally on top of the carrot, about 2-3 tablespoons per wrap. Add 1 spoonful of bright green sauce over salmon.
5. Carefully roll the lettuce wraps away from you and secure with a toothpick if packing for later.
6. Serve with extra bright green sauce on the side. These can be messy but they are so tasty!
