Sundried Tomato Paté (Vegan)
A wonderful addition to a spread of hors d'oeuvres - also works as a lovely condiment for sandwiches.

Yields: 2½ cups.
- 1 cup sun dried tomatoes, soaked for 2-3 hours
- ½ cup fresh tomatoes
- ½ cup walnuts, soaked
- ¼ cup basil
- 2 cloves garlic
- ½ t. curry powder
- Salt to taste
- Blend everything in the food processor until almost smooth. If you do not have one you can try the blender or a hand blender.
- Optional: place paté in the center of a 1-foot piece of plastic wrap, and form into a log shape, wrapping with the wrap and twisting at the edges to form a roll.
- Chill for 4 hours at least, or overnight. Unwrap and slice.
